Some Recipes for the Upcoming Week

It's Monday morning, that time when we look forward into the new week and begin to make some plans for what we will be doing or needing to do. With the 4th of July being on Saturday, this might figure into our plans so that we can be prepared for the big celebration. And what a celebration it should be, honoring this great nation by remembering our origins! Maybe this year more than most as our history seems to be being erased a bit more each day.

Anyhow...I keep promising some recipes, so today I will make good on that promise, or threat, however you see it. This came to mind as I was looking toward the week and thinking of meal ideas. So this is today's dinner...Garlic Butter Steak Bites.

We have some round steaks in our freezer, and they truly do not grill well. Ours always end up tougher than leather, and while they don't taste bad you just get tired of chewing them. So this is what I use for making this recipe, although any steak will work.




Garlic Butter Steak Bites

2 lbs. steak
2 T. olive oil, divided
1 tsp. salt
1/2 tsp. onion powder
1 tsp. black pepper
1/2 tsp. brown sugar
4 cloves garlic, peeled and minced
1/4 c. beef broth
4 T. butter, cut into small pieces
1 T parsley

1. Trim excess fat from steak, and then cut into 1 inch cubes.
2. Put steak cubes in a bowl and add 1 T. olive oil, salt, onion powder, black pepper and brown sugar. Mix well
3. Heat remaining tablespoon of oil in large skillet over medium heat. Add the steak cubes to the pan and fry until brown on all sides.
4. Add the garlic, beef broth, butter and parsley to the meat. Reduce the heat to low and cook until completely done.

Note from personal experience: 4 cloves of garlic is way too much for our tastes, I reduced it to about half last time and it was still to garlicky for us, so I plan to use about 1 clove this time. Suit yourself but be warned that you will be tasting that garlic for hours afterward...and sharing it with everyone you meet.

This serves well with potatoes and veggies, or simply a side of veggies. Mashed potatoes are my choice, but again suit yourself.

Another recipe that I found on Facebook and have added to my repertoire of recipes is Taco Cornbread Casserole. If you like Mexican food, this will surely please your taste buds. And it's fast and easy, always a win in my book.





Taco Cornbread Casserole

1 pkg. corn bread/muffin mix
3 cups cooked taco seasoned meat (this is about a pound)
1 cup sour cream
1 cup shredded sharp cheddar, divided
1/2 cup onion, chopped
1 medium tomato, chopped
1 cup shredded lettuce


1. In a bowl prepare cornbread mix based on instructions on the box.
2. Spread into an 8 x 8 pan sprayed with cooking spray.
3. Bake at 350 degrees for 20 minutes.
4. Remove cornbread from oven and spread meat over corn bread
5. Combine sour cream, 3/4 cup cheese and onion. Spread over meat.
6. Bake for 15 minutes longer or until heated through and cheese is melted.
7. Sprinkle with tomato, lettuce and remaining 1/4 cup cheese.
